Old School Mac and Cheese Recipe

Winnipeg, September 30, 2023 - Old school mac and cheese is a classic comfort food that's easy to make and always delicious. Here's a simple recipe for you:


2 cups elbow macaroni

4 cups shredded sharp cheddar cheese

2 cups whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional)

1/4 teaspoon dry mustard (optional)

1/2 cup breadcrumbs (for topping, optional)


Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or a similar-sized ovenproof dish.

Cook the macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain the pasta and set it aside.

Make the cheese sauce: In a medium saucepan, melt the butter over medium heat. Once the butter is melted, add the flour and whisk continuously for about 1-2 minutes to make a roux. The roux should be light golden in color.

Gradually pour in the milk while continuing to whisk the roux. Cook and stir until the mixture thickens and becomes smooth, usually about 5 minutes.

Add the shredded cheddar cheese to the milk mixture and stir until the cheese is completely melted and the sauce is smooth and creamy.

Season the cheese sauce with salt, black pepper, and, if desired, paprika and dry mustard. Adjust the seasonings to taste.

Combine pasta and cheese sauce: Add the cooked and drained macaroni to the cheese sauce, stirring until the pasta is well coated with the cheese mixture.

Optional breadcrumb topping: If you want a crispy topping, transfer the mac and cheese mixture to the greased baking dish and sprinkle the breadcrumbs evenly over the top.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the mac and cheese is bubbly and the top is golden brown (skip this step if you're not using breadcrumbs).

Serve: Let the mac and cheese cool for a few minutes before serving. Enjoy your delicious old school mac and cheese!
